Unprocessed Candied Jalapeno Coleslaw
Recipe uses heated vinegar, sugar combination to pour over fresh cut cabbage, carrots, red onion, bell pepper and candied jalapenos.

Coleslaw
  1. Wash cabbage. Remove the outer leaves and toss. On cutting board cut the very end off that will remove most of the core.
  2. Place core side down and with large sharp knife cut cabbage in half and in half again. With each section hold the knife and cut on a diagonal to cut into smaller shredded pieces. Ideally you want about one inch thin pieces. Add to a very large bowl.
  3. With peeled carrots cut both ends and toss. Cut carrots into 3-4 ” pieces long. Cut each piece in half down the middle. Lay each piece flat and cut into thin pieces and then chop into a 1/2″ piece. Add to bowl
  4. Add onions, bell pepper, candied jalapenos, salt, pepper, celery salt and cayenne.
Marinade
  1. In a small saucepan add all ingredients. On medium heat heat until the sugar dissolves. Pour over cabbage mixture and stir well for about five minutes. Taste and adjust cayenne as needed. Slaw flavors will continue to marry together as it blends over time.
