  1. Preheat over to 350 degrees. In a skillet on medium low heat, add olive oil, peppers and onions. Saute until tender and stirring as necessary.
  2. Meanwhile, in your favorite mixing bowl, add milk, salt and pepper. Crack open eggs one at a time and drop into a small bowl. Remove any eggshell then add egg to mixing bowl. Once all are added stir well.
  3. On cutting board cut cheese into strips and cut again. You want the cheese to be cut about the size of the onion. This will provide a cheesier bite.
  4. Drizzle a tiny amount of olive oil onto 12.5 x 8.5 glass dish. A round glass dish or a 13 x 9 could be used for this recipe. Wipe around with a paper towel to cover bottom and sides.
  5. Evenly distribute items in glass dish one at a time starting with peppers and onions. Then scatter cheese and bacon. Sprinkle with cayenne if you like a bit of heat.
  6. Pour egg mixture on top of bacon evenly dividing through glass dish. Bake for 30 minutes. Allow to set for two minutes before cutting and serving.
  7. Lagniappe: This dish is great served with salsa. For lunch serve with a light salad for an easy summer meal.
