  1. Layer freezer or parchment paper on counter. Sprinkle coarse black pepper and garlic salt heavily on center of paper. With clean hands place tuna down on seasoning and cover edges with seasoning too. Flip tuna steaks. Sprinkle black pepper and garlic salt. Sprinkle with heavy hand to ensure full flavor.
  2. In skillet heat on medium. Drizzle olive oil on bottom on pan and heat until hot. Add in tuna steaks and watch for the sizzle. Add in onions along side of tuna and swish around with spatula.
  3. Once tuna starts to change colors from the edge and work it’s way toward the center turning from pink to white, flip. This takes about 2-3 minutes on each side and center should still be pink when you plate. . Do not overcook. Otherwise the tuna will be dry. Fish will continue cooking once you remove from the skillet.
  4. Lagniappe- If you have any leftover tuna, it makes a great addition to a quiche.
