To date, I have not made a loquat jam recipe. Here is one that I found for you to try for a jam and jelly, https://nchfp.uga.edu/how/can_07/loquat_jelly.html.or https://nchfp.uga.edu/how/can_07/plum_jam_powder.html Let me know how it turns out. Happy reading. Stay safe

Yes. I wash, drain, and layer loquat as a single layer on tray under a towel. Once they are dry, I will use a paring knife to cut a slit in the loquat, pop out all seeds and then place in freezer zip lock bags. Remember to date your freezer bags and mark as loquats. I wrote an earlier post that provides additional info about loquats and its located in the Preserve section under the Topics. I save the seeds to make a liqueur. Recipe is linked in previous post as well. Enjoy. I have found that if you're harvesting a lot of loquats at one time, they will preserve better in the fridge until you may finish proecessing. Thank you for reading. Happy Cooking. I have processed loquats in zip lock bags so that I may make a Sun Kiss Loquat Cobbler all year.
