Sharing secrets with people who you know will place them in “the vault”. People that know your flaws, but love you anyway.

– if you want a genuine friend, you have to be one
– honesty is always the best policy, even when it hurts
– if you choose poorly, toss ’em back

I am always happy to spend time with my friends. Time spent with friends, sharing a meal or cooking is one of my favorites. Add in a glass of vino or  a handcrafted cocktail, and wait for the magic. Mix in guacamole and I’m happy.

Not long ago, I was fortunate to have dear friends in my kitchen slicing and dicing. While we were at it, I mixed up this salsa. The recipe was a joint effort. Shout out to Alexa https://www.wired.com/2016/06/amazon-echos-head-start-biggest-advantagefor Ricky Martin’s,  “Livin’ la Vida Loca”.

Tres Amigas Salsa

Serves 6-8

12-14 Tomatoes Roasted  (use 6 cups)
1 1/2 cup onion chopped
6 Tablespoons jalapeno, minced
4 Tablespoons garlic, chopped
3 Tablespoons lime juice, fresh squeezed
1 Tablespoon olive oil
1 Tablespoon white vinegar
3 teaspoons salt, kosher

Heat the broiler. Line the baking pan with foil. Set tomatoes on pan. Broil for 8 minutes and turn tomatoes over. Broil for another 8. Set aside to cool.

In a food processor, pulse chop the entire tomatoes for a small chunks. Puree as desired for  your salsa preference. Pour into a large bowl. Add the balance of the remaining ingredients. Taste and add more heat as desired.

Lagniappe:  To add another layer of flavor, add 1/4-1/2 teaspoon chipotle chili powder.
